Acacia is a fine dining establisment across the street from Lawrenceville Prep in Lawrenceville NJ.  Historically, 99% of Acacia's business is dine in.  When the Pandemic closed the restaurant's dining room on March 16, 2020, they had to find a new revenue source.  Lauren DiBartolo talks about this pivot, about government aid, about changing regulations, and she discusses her trepidations about the winter of 2020-21 as she looks forward to outdoor spring dining in 2021.
